ORANGE STREUSEL COFFEE CAKE

 

Batter

2 c of flour

1/2c sugar

2 1/2 tsp baking powder

1 tsp salt

rind of 1 orange*

*reserve 2 tb of orange rind for streusel topping

1 egg slightly beaten

1/2 c fresh orange juice

1/3 c oil

Blend all dry ingredients including orange rind. Make a well and add egg, milk and oil. Mix into dry ingredients. Batter should be lumpy . Pour into greased and flour 9" square pan. Sprinkle top with streusel crumble. Bake at 350 for 45 minutes or until golden.

Streusel Topping

1/4 c flour

1/4 c sugar

2 tb orange rind*

2 tb soft butter

Blend until crumbly.

 

 

 


BANANA CHOCOLATE CAKE 2-3 small bananas1/2 c sugar1 egg1/2c oil1/4c milk1 2/3 c flour3/4 tsp salt1/4 tsp baking soda2tsp baking powder1/2c chocolate chips Using only a fork, mash bananas. Add eggs,oil and milk. Stir in sugar and the rest of the dry ingredients. Add chocolate chips. Pour into greased and flour 9"pan. Bake at 350 for 40-50 minutes Makes the best muffin batter too!
